EGGPLANT BALLS

INGREDIENTS for about 15-20 balls

2 eggplants
40 gr scamorza cheese
1 egg
Parsley
Salt
Pepper
Breadcrumbs
Extravirgin Olive Oil

PROCEDURE

Boiling the 2 eggplants for about 20-30 minutes (verify the cooking). Drain and cut along the long side and obtain the pulp. Put in a bowl and add egg, parsley, salt, pepper and Breadcrumbs. If you like, you can add parmesan. Create the meatballs, coat in breadcrumbs and cook them in oil.

CHERRIES CLAFOUTIS

INGREDIENTS for a baking pan of 24 cm

210 gr of cherries
125 gr milk
40 gr flour
75 gr sugar
2 eggs
30 gr molten butter
Vanilla Pods

PROCEDURE

Put butter and flour in a baking pan of 24 cm of diameter. Put cutted cherries (without seeds) all around the pan. Mix eggs with sugar. Add molten butter, vanilla seeds and flour. At the end add the milk. Pour the mix into the baking pan where I put the cherries and put into the oven at 170°C for about  35-40 minutes. Verify the cooking with a toothpick.

FRISELLE WITH FRESH TOMATO AND EGGPLANT

4 friselle
4 tomatoes
1 eggplant
Basil
Salt

PROCEDURE

Make a little cut on the tomatoes peel and put into boiling water for 1 minute. In this way you can peel them easily. Cut tomatoes into little pieces, add salt, pepper and some basil and put in a colander. In the meantime peel the eggplant, cut it and put in a colander with salt for about 30-60 minutes. Cook eggplant with oil and then mix it with tomatoes.

In the meantime put friselle into water few seconds in a side and few second for the other side. Put the mix of tomatoes and eggplanton the frisella and serve as bruschetta.

 

 

TOMATOES FILLED WITH RICE ON A FENNEL CREAM

INGREDIENTS for 2 People

4 tomatoes
8 teaspoon of rice
1 fennel
Extravirgin Olive Oil
Salt
Pepper
Parsley
Oregano

2 hour for  preparation + 45 minuts cooking

PROCEDURE

Cut the spherical cup of tomatoes and empty them from thier liquids. Put the liquids in a bowl and add oil, rice, oregano, salt and pepper. Let it rest for 2 hour. In the meantime put some salt into the tomatoes  and turn them upside down.

After 2 hours, fill the tomatoes with liquids and put them on a baking pan in oven at 190°C for about 40-45 minutes. Verify the rice cooking.

In the meantime, boil the fennel and then bland it. Put the cream intop a plate under the tomatoes and serve withe parsley.

SPAGHETTI WITH PEAS CREAM AND CRUNCHY CHEEK LARD

INGREDIENTS for 2 People

160 gr spaghetti
300 gr fresh peas
100 gr cheek lard
½ red onion
Extravirgin Olive Oil
Salt
Pepper

PROCEDURE

Clean peas and boil them for 5 minutes. Put the minto a pan with ½ whole red onion (then remove it); add salt and pepper. Blend peas with little water and oil. Put the cream again into the pan.

Boil pasta and in the meantime brown the cheek lard in another pan. At the end put pasta into peas cream and then add crunchy cheek lard.

LITTLE SARDINIAN GNOCCHI WITH VEGETABLES RAGOUT

INGREDIENTS for 2 People

150 GR of semolina flour
Water
1 courgette
1 carrot
1 onion
8 pachino tomatoes
Extravirgin Olive Oil
Salt
Pepper

10 minuts + 30 minuts rest + 15 minuts cooking

PROCEDURE

Create gnocchetti with flour and water until you reach a solid mix. Create many gnocchetti  and give them the tipical lined shape (look photo). For this operation you can use a fork.

In the meantime cut onion, courgette and carrot e put into a pan with oil. At the end add tomatoes. Boil pasta for about 15 minutes. Put the gnocchetti into the pan and mix with vegetables ragout. Served hot in a plate.

QUICK COCOA PIE

INGREDIENTS for a glass bowl of 14 cm of diameter 

60 gr flour
60 gr sugar
60 ml milk
1 egg
25 gr cocoa powder
½ teaspoon of yeast
2 spoons of seed oil

PROCEDURE

 

Put flour and cocoa in a bowl. Add sugar and yeast. Mix all and add egg, milk and oil. Take a glass bowl, oil it and put the mix into. Cook in microwave for 3 minutes at the maximum power.

 

BORLOTTI CREAM WITH RADICE AND WALNUTS

INGREDIENTS for 2 people

1 box of Borlotti
Some radish (as you like)
3-4 walnuts
A little bit of celery
1 little onion
Extravirgine Olive Oil
Rosemary
Salt and pepper

PREPARATION

PROCEDURE

Brown the onion with a little bit of oil. Add borlotti and Rosemary. Mix quickly and add about half a liter of water. Add also a part of radish and boil for 5-10 minutes. Eliminate the excedent liquid and blend.

Put the cream on a plate and garnish with the other radish, walnuts, celery, oil and pepper.

GENOVESE FOCACCIA

INGREDIENTS for a baking pan with diameter of 28 cm

350 gr of flour 00 or 0
42 gr of Olive oil
5 gr of sugar
210 ml warm water
10 gr of yeast
10 gr of salt
Rosemary

PREPARATION

1 hour + 1 hour + 10 minuts

PROCEDIMENTO

Mix flour, oil, sugar and ¾ of water for about 10 minutes. Add yeast melt in the other water. At the end add salt.

Make a ball and put to rest for 1 hour at a temperature of 28-30°C. Extend the mix and put to rest another hour. Put into oven at 230-250°C for 10 minutes and covered with oil and salt.

EGGPLANT ROLLS ON A PEPPER CREAM

INGREDIENTS for 2 people

1 eggplant
1 pepper
1 mozzarella
Tomato sauce
Extravirgin Oilive Oil
Salt

PREPARATION

PROCEDURE

Cut the eggplant for the long side and make slim slices. Put the slices in a colander covered with salt for about 30-60 minutes. Then clean eggplants with water and dry with kitchen paper. Broil the slices and in the meantime cook tomato sauce as you like (salt, pepper, flavours…).

Cut mozzarella and put over every slice some tomatoes and some pieces of mozzarella. Make the rolls and cook into oven for 15-20 minutes at 180°C.

In the meantime, cut the pepper and boil it. When it’s coke, blend it. Put the cream on the basis of the plate under the eggplant rolls.
